Breakfast Nacho Casserole
Who doesn’t like nachos? Have you thought about them for breakfast? Try this easy recipe..pretty tasty!
In a frying pan, cook the sausage. Drain and set aside .
Cook chopped onion.
Melt butter in shallow casserole. Whisk eggs in a small bowl, add sausage, salt and pepper.
Put egg mixture in casserole. top with chips, and shredded cheese
Bake 8-10 minutes, until eggs are set. Top with salsa and serve. (2-4 servings)
Be creative, you can top with avocado, chopped peppers, whatever sounds good!
Peanut Butter and Banana Brulee
Yummy breakfast or snack idea…easy, delicious and satisfying. Try it!
Spread peanut butter on toasted muffin, top with sliced banana, sprinkle with brown sugar. Broil 2-3 minutes until brown sugar is melted and bruleed!!
Delish!

Baked Tomatoes with Cheddar Frittata Filling
This is a pretty and delicious dish for breakfast, lunch or a light dinner. It is a quick and EASY warm meal. Recipe can be halved or doubled. Enjoy!
Slice tops off tomatoes and reserve. Scoop out pulp and seeds. Using paper towel, wipe out inside of tomato.
Dice reserved tomato tops and combine with eggs, cheese, green onions, bacon, parsley, pepper and salt. Spoon into prepared tomatoes until 2/3 full.
Place tomatoes on baking sheet, bake on middle rack at 425F oven for 15 minutes or until filling is just set.
Toast and butter rolls. Push down in center of roll to make and indentation. Place cooked tomatoes on the roll and serve. Serves 4.
This is a take on a breakfast my son loves, Egg in a Hole..Eggs in a Roll!
Easy and little pieces of art for your plate. Enjoy!
Preheat oven to 350. Cut a little off top of roll. Hollow out roll so there is room for an egg. Save top. Spread a little butter inside the roll.
Put egg in roll, top with a little cream, parmesan cheese and salt and pepper, herbs
Put on rimmed cookie sheet and bake at 350 for about 20-25 minutes, until egg is set. Put top on roll for last 5 minutes. Serve with sliced tomatoes and parlsey or a cup of tomato soup… add a little color.
Voila..breakfast, lunch or a light dinner.

Heat skillet, grease lightly with oil. Combine all ingredients in a large bowl. Stir just until moistened. Pour 1/4 cup batter onto skillet for each pancake. Let bubbles break the surface and edges are golden brown. Serve with warm syrup…
