         Baked Lemon Pasta
This is an easy pasta dish from the Pioneer Woman Cookbook..it tastes delicious and goes well by itself with a salad, or as a side to a meet dish. Give it a whirl, you will love it.
1 lb thin spaghetti
4 tbl salted butter
2 tbls olive oil
2 cloves garlic, minced
1 whole lemon, juiced and zested
2 cups sour cream
1/2 tsp kosher salt, or to taste
Lots of grated parmesan cheese
flat leaf parsley, chopped
extra lemon juice
Preheat oven to 375. Cook spaghetti until al dente.
In a skillet, melt butter with olive oil over LOW heat. When butter is melted, add minced garlic.Squeeze lemon juice into pan. Turn off heat.
Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt to taste. Pour mixture over drained spaghetti and stir together. Pour spaghetti into an oven safe dish.
Bake covered for 15 minutes. Remove foil and bake for an additional 7-10 minutes. Don’t bake too long, or pasta will dry out .
Remove from oven, squeeze a little more  lemon juice over the top. Generously top with parmesan cheese, then chopped parsley. 
Serves 6…Enjoy!

                                           CORN BREAD SOUFFLE
I love cornbread, and this time of year I like to make this souffle..it goes well with pork, meatloaf or chicken. A warm comfort food, easy to make and easy to eat!
1 cup cornmeal
1/2 teaspoon baking soda
1/4 tsp salt
2 large eggs
1 cup plain yogurt (or sour cream if you prefer)
1 cup cream style corn
1/4 cup milk
2 tbs. vegetable oil
Combine corn meal, baking soda and salt.
Beat eggs, yogurt, corn, milk and oil together. Add dry ingredients, stir just enough to moisten.
Spoon into greased 5 cup casserole or souffle dish. Bake in 350 preheated oven for about 35-45 minutes.
 Spoon out of dish, or cut in wedges or squares. Serve with butter and honey.

I love this recipe, there are many variations tried through the years. Sourdough bread gives it good flavor. I use butter instead of margarine.
Vegetarian option is with veggie crumbles..Morningstar sausage crumbles are good.

TaterTot Casserole.

Yum! this is a recipe that every loves to hate, but the first bite and you are hooked! There are  many recipes for this and you can create your own version, but here is the tried and true recipe I have used for 20 years..always a hit!

TaterTot Casserole

1 pound ground beef, ground turkey or veggie crumbles

1 can cream of mushroom or chicken soup

1 cup or more of shredded cheese, cheddar or swiss or your favorite blend

1 bag of frozen potato tots

Vegetables may be added, I like peas and onions, but my kids always liked it without!

  • Brown meat and put in a casserole pan
  • Add veggies if you are addding them
  • Spread undiluted can of soup over top of meat mixture
  • Sprinkle with cheese
  • Add potato tots to the top.
  • Bake at 350 for approximately 40 minutes until casserole is bubbly and golden.

Serve with a simple salad and enjoy! Easy
