Cranberry Apple Pecan Bread Pudding
Not your usual bread plum pudding..warm, fruity, full of nuts and spices..Easy, prepare in your slow cooker..Serve warm with ice cream or frozen yogurt. Enjoy this Holiday “pudd”! No plums, no fruitcake!
Preheat oven to 350, spread pecans on baking sheet and toast about 10 minutes.
Place bread cubes in a greased 3 qt or larger slow cooker.
Peel, core and thinly slice apples and cranberries on top of bread.
In a large bowl, mix together sugar, cinnamon and nutmeg
Add eggs and mix well
Blend in milk, stir in bourbon , lightly mix in pecans with bread and apples
Pour egg mixture over ingredients in slow cooker. Drizzle with melted butter.
Cover and cook on low, for 31/2 to 41/2 hours, until custard is set
Let stand about 15 minutes, with lid on. Serve warm with ice cream…Warm tummy!
2 Ingredient Pumpkin Spice Cake
Too good to be true? No, this is delicious and simple.
It is better baked and refrigerated overnight..Put some cream cheese frosting on it if you choose..yum!
Preheat oven to 350, grease or spray a 9x13 pan.
In a large bowl, mix cake mix and pumpkin. Stir till well blended.
Spread in pan and bake in preheated oven, 25-30 minutes until knife in center comes out clean. Cool, spread with frosting or not! Delicious…Gobble, Gobble…

Berries and Pound Cake with Melted Ice Cream
This is an easy recipe from Rachel Ray. It is delicious and can be put together in many combinations…use different berries, flavors of ice cream, assorted cakes..be daring!
Mix berries and sugar. Pile cake cubes in pretty bowl, top with berries.
Melt ice cream in microwave for 15-20 seconds. Stir and pour over fruit. YUM!
Serves 4 ( or 2 BIG servings!)
PEANUT BUTTER APPLE CRISP PIE
It is fall, there are delicious apples of every color and size everywhere. Apple Pie and Apple Crisp are comfort food now..Here is a yummy blend of apple crisp, pie and peanut butter. Illustration by Kelly Medina Studio.
CRISP:
Place oatmeal, brown sugar, cinnamon, nutmeg, salt into a bowl. Stir ingredients together. Add butter and mix together. Melt peanut butter. Pour melted peanut butter into crisp and mix togehter.
PIE:
Preheat oven to 350 degrees. Slice apples and put in crust until full. Apples will sink when they cook, so pile them on! Spread crisp mixture over apples.
Bake for 20-30 minutes. Serve warm with ice cream…Enjoy!
