Even though it is after Labor Day…have a picnic…warm September afternoon.
So many good breakfasts….lunches and dinners on this ship…back to reality…
Cobb Salad Sandwich
Who doesn’t love Cobb Salad? Try this variation as a sandwich…promise you will love it!
You can make it on any kind of bread, this is for ciabatta which makes it a very substantial sandwich! Serves 4.
- 1 large ciabatta bread, split in half lengthwise
- blue cheese dressing..your own or store bought
- 4 large romaine lettuce leaves
- 3 hard boiled eggs, sliced
- 2 large avocadoes, sliced
- 4 thick slices of turkey
- 4 slices of cooked bacon
- salt and pepper to taste
Spread blue cheese dressing on bread. Line one half with lettuce and eggs. Line other with turkey, tomatoes, avocadoes, bacon. Put together…YUM!
