Roasted corn, tomato, avocado salad

This recipe comes from the Martha Stewart Show..watched her make it live! She served it alongside grilled lobster, but it would be delicious with anything, or on its own!

  • 2 ears corn, grilled ( can be done inside on grill pan)
  • 2 pints cherry tomatoes, halved
  • 1 avocado, cut into chunks
  • 1-2 tbls. canola oil
  • salt and pepper to taste

Cut corn off cob, combine rest of ingredients in large bowl. Use a glass bowl, this is a really pretty salad! You could add onion, chives, peppers, or anything to this. Or add cooked chicken or fish to it for a salad supper.  Be creative and enjoy!

Rainy Day, Martha Stewart, and Sea Shells

Up early to get to the Martha Stewart Show Studio. Met Abby and Peter, waited in the rain, finally in..Beautiful studio set up..very Martha!

Lobster, avocado and corn salad; topiaries, shell sconces. Love the little shell salt and pepper holders, may have to give those a try…so cute!

Left New York, returned home, miss the city, miss the kids, thank you for the best Mother’s Day ever. Stay tuned for pictures of adventures we had!
