Easy Sugar Cream Pie
This is for all my hoosier, sweet tooth friends, you know who you are!
This tasty recipe has been traded many times, tweeked , changed and still loved. Some like the frozen Wicks Sugar Cream pie, but give this a whirl..it’s not bad! It’s all done in a blender, doesn’t get much simpler!
Put all ingredients in a blender. Blend for 30 seconds. Pour into a buttered 9 ” pie pan
Sprinkle with nutmeg. Bake at 350 for 45 minutes. The flour will settle and make its own crust. Amazing!
Lemonade Pie...try this old fashioned summer pie… you will love it…can be served with some berries or candied lemon peel on top. Yum!
Summer Strawberry Pie
My sweet mother in law, Ruth used to make the best Strawberry Pie. Everytime I see fresh strawberries, I think of her Summer Sunday Strawberry pie and smile. Here is a variation of her recipe..I have added a little cream cheese and some strawberry preserves instead of using jello. Enjoy!
In a mixing bowl, beat cream cheese, sugar, milk and vanilla until blended.
Spread mixture in bottom of baked pie shell. Spread cream cheese mixture with melted strawberry preserves. Save a little to drizzle over strawberries.
Arrange whole strawberries, bottoms up on top of mixture. Drizzle preserves over strawberries. Chill at least 1 hour. Serve with whipped cream or vanilla ice cream.
PEANUT BUTTER APPLE CRISP PIE
It is fall, there are delicious apples of every color and size everywhere. Apple Pie and Apple Crisp are comfort food now..Here is a yummy blend of apple crisp, pie and peanut butter. Illustration by Kelly Medina Studio.
CRISP:
Place oatmeal, brown sugar, cinnamon, nutmeg, salt into a bowl. Stir ingredients together. Add butter and mix together. Melt peanut butter. Pour melted peanut butter into crisp and mix togehter.
PIE:
Preheat oven to 350 degrees. Slice apples and put in crust until full. Apples will sink when they cook, so pile them on! Spread crisp mixture over apples.
Bake for 20-30 minutes. Serve warm with ice cream…Enjoy!
JAN’S MINT CHOCOLATE ICE CREAM PIE
I had dinner with friends last night..the dessert hit a home run!
Perfect for a warm summer evening! Jan used mint chocolate chip, but any ice cream or frozen yogurt can be used, try your own creative combination.
The crust can be any crumbs you like too. You will not be disappointed!
Place softened ice cream in the pie shell. Freeze for a few minutes. Spread jar of topping on top. Sprinkle with chocolate bits, freeze until ready to serve. Top with whipped cream….YUM!
SUMMER STRAWBERRY PIE
Everyone in the midwest has a favorite Strawberry Pie recipe…it is a winner this time of year with fresh strawberries in abundance. My mother-in-law used to make this pie. I have modified it a little..she used red jello in the recipe. I am not a jello fan, but if you are go for it! Use more strawberries if you wish, more whipped cream too!
Arrange half of the strawberries in baked pie shell. Mash remaining berries and combine with sugar in a medium saucepan. Cook over medium heat and bring to a boil, stirr frequently.
In a small bowl whisk together cornstarch and water. Gradually stir this mixture into boiling strawberry mixture. Reduce heat and simmer until thickened., about 10 minutes, stir constantly. Pour mixture over strawberries in pie shell. Chill for several hours before serving. Whip cream and serve with pie slice.
