Asparagus-Goat Cheese Pasta
This is a good and easy recipe that I got from Real Simple a few years ago…
You can mix and match pasta, use different veggies, add chicken or salmon…it is good.
Still love it with asparagus the best.
Boil a large pot of water..cut asparagus into 2-3 3 inch pieces. Blanch in boiling water until bright green, about 3 minutes. Remove asparagus and rinse under cold water to stop the cooking. Add spaghetti to boiling water and cook until al dente according to directions on package. Drain.
In medium saucepan over med-high heat, melt butter. Blend in flour with a whisk, add the broth and cook for 2 minutes, stirring until sauce thickens. Blend in goat cheese and the lemon peel.
Toss the spaghetti with the asparagus, sauce, half the parmesan. Serve, sprinkle with remaining parmesan and freshily ground pepper. Enjoy!
Serves 4.
Taco Cupcakes
We love tacos, this is a fun take and you can add any ingredients to suit your taste.
Preheat oven to 375. Spray 18 muffin cups with cooking spray.
Brown meat in skillet, add seasoning mix and water, simmer for 5 minutes.
Place one wonton wrapper in bottom of each muffin cup. Layer beans, crush tortilla chips, top with meat, cheese. Repeat for all wonton wrappers.
Bake for 15 minutes or until golden brown.
Remove cupcakes from tin and top with your favorite toppings. Enjoy!

Banana and Cream Cheese Grilled Cheese
Try this yummy sandwich for breakfast…or lunch or dinner…It is delicious!
Asparagus Guacamole
This is a nice twist on the tried and true..give it a whirl….it is a tasty spring appetizer. Good on Turkey Burgers too!
Place cooked asparagus in food processor or blender. Add onion and garlic, cover and process until smooth.
in a small bow. combine the tomato, mayo, lemon juice, salt, cilantro, chili powder and hot pepper sauce. Stir in asparagus mixture until blended.
Serve with veggies, chips, or on top of burger. Enjoy! Makes 2 cups.
Mexican Corn, Bean and Rice Salad
This is a good, easy salad, make it as mild or spicy as you like..You can add chicken or shrimp or beef to make it a full meal. Enjoy!
Mix ingredients together, refrigerate for an hour..serve, enjoy!

Cauliflower Crust Hawaiian Pizza….
I know what you are thinking..but this is good!! Great blend of flavors…try it!
Try with different toppings, chicken, and barbeque sauce, smoked gouda. Pesto with tomato and mozerella, sky’s the limit!
Crust:
Place small pieces of cauliflower and microwave dry for abou 8 minutes. Cool
Prepare the crust: Preheat oven to 425. Spray a cookie sheet or pizza pan with nonstick spray. In a medium bowl, mix cauliflower with remaining crust ingredients.. Pat the crust into a 9-12 inch round on prepared pan. Bake for 15 minutes or until golden. Remove crust and turn the heat to broiler.
Prepare the pizza: Spread the sauce on top of the baked crust, leaving a 1/2 inch border around the edge. Sprinkle 1/4 cup cheese on top. Add the bacon and pineapple, spreading it out around the pizza. Sprinkle the remaining cheese on top. Broil the pizza 3-4 minutes, or until the toppings are hot and the cheese melted and bubbly.
Cut into slices and serve immediately. May need a fork to eat!

Broccoli Soup with Pasta
This is a delicious, comforting soup. Easy to make and filling. Top with parmesan cheese if desired….serve with a crusty bread..good winter lunch or dinner. You can also let this simmer in the crockpot, ready when you are.
Fill a pot that will accomodate the broccoli with water, bring to a boil.
Boil broccoli until tender about 5 minutes.. Drain and set aside.
Put the garlic and olive oil in 4-6 qt soup pot. Cook over medium heat until garlic sizzles, add the cooked broccoli. Season with salt and pepper, stir occasionally, mash broccoli into small pieces. Add water, bouilion, pasta bring to boil..simmer until pasta is cooked and your kitchen smells wonderful.
