Happy 4th of July!! Sweet!

                  Fluffy Strawberry Muffins
Strawberries are sooooo good right now…try using some in this recipe..it is yummy, light and fluffy, and easy!
1/2 cup softened butter
3/4 sugar
1 egg
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 tsp vanilla
11/2 cup chopped fresh strawberries
3 tsp sugar
1/2 tsp cinnamon
sprinkle of shredded coconut (optional)
Cream butter and sugar in a medium bowl. Add egg and mix well.
Add flour and milt alternately to butter mixture. Mix. Add vanilla. Gently stir in strawberries.
Add batter to sprayed muffin pan. Combine sugar,  cinnamon, coconut and sprinkle on top of batter.
Bake at 350 for 25-30 minutes. Makes 12 muffins. Enjoy warm with butter or whipped cream cheese..

                              Summer  Strawberry Pie 
My sweet mother in law, Ruth used to make the best Strawberry Pie. Everytime I see fresh strawberries, I think of her Summer Sunday Strawberry pie and smile. Here is a variation of her recipe..I have added a little cream cheese and some strawberry preserves instead of using jello. Enjoy!
1 baked 9” pie crust, cooled
3 cups fresh whole strawberries, washed and hulled
8 oz cream cheese, softened
1/3 cup sugar
2 tbs milk
1 tsp vanilla extract
1 jar strawberry preserves, heated to boiling point
In a mixing bowl, beat cream cheese, sugar, milk and vanilla until blended.
Spread mixture in bottom of baked pie shell. Spread cream cheese mixture with melted strawberry preserves. Save a little to drizzle over strawberries.
Arrange whole strawberries, bottoms up on top of mixture. Drizzle preserves over strawberries.  Chill at least 1 hour. Serve with whipped cream or vanilla ice cream.
