Tomato with Rice Soup
This is to go with the Grown Up Grilled Cheese posted a couple of days ago. Nothing goes with a grilled cheese sandwich like tomato soup!
This is a satisfying soup. If you are feeling creative, add a handful of fresh spinach, a can of black beans, or some vegetarian sausage crumbles while heating..endless possibilities!
Bring tomatoes, veggies and seasoning to a boil.Reduce heat to medium.
Add the rice and cook for 25-30 minutes. Garnish with fresh parmesan cheese and parsley if desired. Dive in!
Serves 4.
Lacy’s Veggie “Caviar” Dip
This is not really caviar, but it is a tasty blend of veggies that you can dip into with chips or bread, or even eat it right out of the bowl! Try it, it is addicting! Thanks to my friend Lacy for introducing this recipe to me…love it!
Drain cans of vegetables, place in large bowl and mix with onion and celery.
Gets better with age! Serve with crackers, chips, bread, or just eat with a spoon.
Sausage and Cheese Breakfast Casserole
I love this recipe, there are many variations tried through the years. Sourdough bread gives it good flavor. I use butter instead of margarine.
Vegetarian option is with veggie crumbles..Morningstar sausage crumbles are good.
Found this on Recipe Curio, written on an old recipe card. Love it!

FRIED GREEN TOMATO SALAD
Fried green tomatoes are delicious. I am not sure if it is the tomato or the yummy coating and frying! Anyway, you can eat this as a side, or put them on top of a salad. Delicious for a summer treat and using up your crop of tomatoes!
Dip tomato slices into egg wash with milk and then roll in the dry mix.
Drop in hot fry pan of olive oil, fry until golden brown, place on paper towel.
Mix greens and veggies, place fried tomatoes on top. Top with your favorite dressing if desired. I like creamy ranch..great blend of flavors.

SPINACH SALAD WITH SWISS CHEESE CRISPS and DIJON-RED VINEGAR DRESSING
This is a nice twist to spinach salad with swiss cheese. The crispy swiss is yummy..make extra to nibble on!
Heat a nonstick skillet over medium heat. Add shredded swiss cheese in small, 2” piles to the hot skillet. Fry the cheese to a light golden color around edges, about 1 minute. Use a small spatula to turn the cheese rounds over, cook the other side.
Remove to a plate to cool and continue the process, making 12-16 rounds.
Crisps may be seasoned with ground pepper or herbs for added flavor.
Toss spinach in large bowl. Slice apple into a small bowl, squeeze lemon wedge over it and toss lightly.
To make dressing, combine mustard, red wine vinegar and olive oil and whisk.
Add apples and dressing to spinach and toss.
Divide salad between 4 bowls or plates, top with cheese crisps. Enjoy!
Layered Mexican Dip
This recipe has been around for awhile, but somehow I always come back to fixing it for a party dip. It is easy to add ingredients, be creative, serve with tortilla chips.
On a large platter, spread can of beans. Next layer, spread sour cream over beans.
Sprinkle some taco seasoning on top of the sour cream.
Spread guacamole over the sour cream. Top with black olives, black beans, green onions, tomatoes, corn, or what ever you want to try!
Enjoy with a cold margarita or beer! Cheers!
Smoky Black Bean and Corn Pizza
Try pizza on the grill. It is delicious and a nice change. If you prefer, this can also be made and baked in the oven.
Combine tomato, corn, beans in a medium bowl.
Sprinkle a baking sheet with corn meal and stretch pizza dough to a 12” circle.
Using a spatula, place pizza dough on preheated grill, close lid and bake for about 4-5 minutes.
Flip the dough and spread with barbeque sauce. Add tomatoes and cheese and bake for another 5 minutes, untill crust is cooked and toppings are hot and melted.

PASTA WITH SPINACH, BEANS AND CHEESE
This recipe is from one of my favorite authors, Elizabeth Berg. It is very easy to make and delicious. Use your favorite pasta..I use whole wheat penne or rotini. Fresh, good asiago cheese makes a difference.
Combine all ingredients in a large bowl. Top with a little more cheese and ground pepper if desired. Serves 4.
Serve with crusty bread and a glass of wine! Enjoy.
