       Cranberry Apple Pecan Bread Pudding
Not your usual bread plum pudding..warm, fruity, full of nuts and spices..Easy, prepare in your slow cooker..Serve warm with ice cream or frozen yogurt. Enjoy this Holiday “pudd”! No plums, no fruitcake!
1 cup chopped pecans
8 slices raisin bread, cubed
2 medium green apples
1 cup sugar
1 tsp cinnamon
1/2 tsp. nutmeg
3 eggs
3 cups half and half or milk
1/4 cup brandy or bourbon
1/2 cup dried cranberries
1/4 cup butter, melted
vanilla ice cream or frozen yogurt
Preheat oven to 350, spread pecans on baking sheet and toast about 10 minutes.
Place bread cubes in a greased 3 qt or larger slow cooker.
Peel, core and thinly slice apples and cranberries on top of bread.
In a large bowl, mix together sugar, cinnamon and nutmeg
Add eggs and mix well
Blend in milk, stir in bourbon , lightly mix in pecans with bread and apples
Pour egg mixture over ingredients in slow cooker. Drizzle with melted butter.
Cover and cook on low, for 31/2 to 41/2 hours, until custard is set
Let stand about 15 minutes, with lid on. Serve warm with ice cream…Warm tummy!

Grilled Brie…Mais Oui! This is a yummy sandwich..warm and gooey. 
                        Roasted Apples, Brie and Pecan Panini
2 apples, cored and sliced into 1/4 ” slices (I like Granny Smith or Fuji)
Ciabatta or sourdough bread
4 oz Brie
4 tablespoons pecan halves
Preheat oven to 400 F. Spray a baking sheet with cooking spray and arrange apples on the sheet. Bake for 15-20 minutes until apples are golden brown.
Preheat a panini grill (or just cook like your favorite grilled cheese sandwich)
For each sandwich, butter outside pieces of bread. Spread brie over one slice of bread. Top with roasted apple slices and pecans. Top with another slice of bread. Grill for 3-4 minutes until the cheese is melted and the bread is toasted.
Enjoy!

PEANUT BUTTER APPLE CRISP PIE
It is fall, there are delicious apples of every color and size everywhere. Apple Pie and Apple Crisp are comfort food now..Here is a yummy blend of apple crisp, pie and peanut butter.  Illustration by Kelly Medina Studio.
1/2 cup oatmeal
1/3 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
dash of salt
1/4 cup butter, softened
1/3 cup peanut butter
5-10 apples
prepared pie crust
CRISP:
Place oatmeal, brown sugar, cinnamon, nutmeg, salt into a bowl. Stir ingredients together. Add butter and mix together. Melt peanut butter. Pour melted peanut butter into crisp and mix togehter.
PIE:
Preheat oven to 350 degrees. Slice apples and put in crust until full. Apples will sink when they cook, so pile them on! Spread crisp mixture over apples. 
Bake for 20-30 minutes. Serve warm with ice cream…Enjoy!

SPINACH SALAD WITH SWISS CHEESE CRISPS and DIJON-RED VINEGAR DRESSING
This is a nice twist to spinach salad with swiss cheese. The crispy swiss is yummy..make extra to nibble on!
11/2 cups shredded swiss cheese
12 oz of baby spinach
1 small apple, granny smith or gala
1/2 lemon
1 rounded tbls dijon mustard
1/2 tbl red wine vinegar
1/4 cup extra virgin olive oil
Heat a nonstick skillet over medium heat. Add shredded swiss cheese in small, 2” piles to the hot skillet. Fry the cheese to a light golden color around edges, about 1 minute. Use a small spatula to turn the cheese rounds over, cook the other side.
Remove to a plate to cool and continue the process, making 12-16 rounds.
Crisps may be seasoned with ground pepper or herbs for added flavor.
Toss spinach in large bowl. Slice apple into a small bowl, squeeze lemon wedge over it and toss lightly. 
To make dressing, combine mustard, red wine vinegar and olive oil and whisk.
Add apples and dressing to spinach and toss.
Divide salad between 4 bowls or plates, top with cheese crisps. Enjoy!
