Build a Better Buttie
Here in England the buttie is a bacon sandwich…greasy, buttery, bacony and delicious. It is also know to be a hangover cure…Here is a recipe for a bacon buttie…this one with English bramley apples and stilton cheese…put it in or leave it out…have a buttie!
Cook bacon, butter bread…layer with bacon, apple and stilton..Take a bite…mmmmmmmm

Grilled Cheese, Tomato, Bacon and Avocado
I have a thing for grilled cheese…the ultimate comfort food…Here is a variation using cream cheese and sliced cheese. Make it with any ingredients you like..Chow down!
Build sandwich: spread cream cheese on 2 slices bread, add cheese slices, tomato, avocado slices, bacon. Spread butter on outside of bread, grill over medium heat until golden brown on both sides. YUM!
Cobb Salad Sandwich
Who doesn’t love Cobb Salad? Try this variation as a sandwich…promise you will love it!
You can make it on any kind of bread, this is for ciabatta which makes it a very substantial sandwich! Serves 4.
Spread blue cheese dressing on bread. Line one half with lettuce and eggs. Line other with turkey, tomatoes, avocadoes, bacon. Put together…YUM!
7 Layer Chop Salad
This is an oldie but goodie. I have fixed this salad so many times, and still love it!
It is pretty to look at and tastes wonderful too!
This is the basic recipe, but feel free to shake it up, add different veggies, pasta, cheese, etc. Serve with a warm bread and you have an easy and yummy meal.
Whisk mayo, sour cream, ranch dressing, chives together. Set aside.
In a large, glass serving bowl, layer from bottom to top: lettuce, macaroni, peas,chicken, bacon, eggs and cheese.
Top with dressing, cover with plastic wrap and chill at least 2 hours or overnight.
Best Ever Egg Salad Sandwich
Ok, what would the evening of Easter be with out an egg salad sandwich for dinner? Try this one..has a little different taste with the olives. Of course you can omit, but they are tasty in this ‘wich!
Cook bacon. Mix eggs, olives, celery 1/4 cup mayo, mustard together in medium bowl.
Toast bread, spread one slice with mayo, put egg salad, lettuce and 2 slices of bacon on top, top with other slice of bread. A good sandwich…even if you don’t love egg salad! Makes 6 sandwiches.
Baked Tomatoes with Cheddar Frittata Filling
This is a pretty and delicious dish for breakfast, lunch or a light dinner. It is a quick and EASY warm meal. Recipe can be halved or doubled. Enjoy!
Slice tops off tomatoes and reserve. Scoop out pulp and seeds. Using paper towel, wipe out inside of tomato.
Dice reserved tomato tops and combine with eggs, cheese, green onions, bacon, parsley, pepper and salt. Spoon into prepared tomatoes until 2/3 full.
Place tomatoes on baking sheet, bake on middle rack at 425F oven for 15 minutes or until filling is just set.
Toast and butter rolls. Push down in center of roll to make and indentation. Place cooked tomatoes on the roll and serve. Serves 4.
