Cauliflower Crust Hawaiian Pizza….
I know what you are thinking..but this is good!! Great blend of flavors…try it!
Try with different toppings, chicken, and barbeque sauce, smoked gouda. Pesto with tomato and mozerella, sky’s the limit!
Crust:
1/2 head cauliflower, shredded into small crumbles
1 large egg
1 cup shredded mozzerella cheese
1 tsp dried oregano
1/2 tsp minced garlic
1/2 tsp onion salt

Toppings:
1/2 cup tomato basil marinara sauce or pizza sauce
1/2 cup finely shredded mozerella cheese
3 slices Canadian bacon, cut into strips
1/2 cup drained pineapple tidbits
Place small pieces of cauliflower and microwave dry for abou 8 minutes. Cool
Prepare the crust: Preheat oven to 425. Spray a cookie sheet or pizza pan with nonstick spray. In a medium bowl, mix cauliflower with remaining crust ingredients.. Pat the crust into a 9-12 inch round on prepared pan. Bake for 15 minutes or until golden. Remove crust and turn the heat to broiler.
Prepare the pizza: Spread the sauce on top of the baked crust, leaving a 1/2 inch border around the edge. Sprinkle 1/4 cup cheese on top. Add the bacon and pineapple, spreading it out around the pizza. Sprinkle the remaining cheese on top. Broil the pizza  3-4 minutes, or until the toppings are hot and the cheese melted and bubbly.
Cut into slices and serve immediately. May need a fork to eat!

                 Grilled Cheese Croutons
Ok…who doesn’t like grilled cheese and tomato soup…So, instead of dipping, put the grilled cheese on the soup!!
2 slices of bread, sourdough, whole wheat, english muffin..your choice!
cheddar cheese or any kind you like
butter
Make your grilled cheese sandwich…heat up your tomato soup…
Cut the grilled cheese into small pieces…put on hot soup. Enjoy…Slurp..Yum!

Ok, for you brussel sprout haters…give this recipe a spin..very good, pretty to look at and perfect for a holiday meal too…easy!
11/2 lb brussel sprouts
1/2 tsp salt
4 tbl butter, melted
4 tbl  grated parmesan cheese
1/4 tsp black pepper
1/4 tsp season salt
1/4 tsp garlic powder
optional: handful of bacon pieces
Wash and trim brussels. Make an X cut in the bottom of stem. Place in medium pot and boil for approx. 5-6 minutes, until tender but still vibrant green.
Place in casserole dish and toss with melted butter, salt, pepper, seasoning. Top with cheese and bacon bits.
Place under broiler until browned..serve hot…

This is a pretty and delicious dish for breakfast, lunch or a light dinner. It is a quick and EASY warm meal. Recipe can be halved or doubled. Enjoy!
4 large firm tomatoes
5 eggs, beaten
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
1/4 cup crumbled, cooked bacon
2 tblsp. chopped parsley or chives
1/2 tsp pepper
salt to taste
2 kaiser rolls (can use hamburger buns too!)
2 tblsp. butter softened
Slice tops off tomatoes and reserve. Scoop out pulp and seeds. Using paper towel, wipe out inside of tomato.
Dice reserved tomato tops and combine with eggs, cheese, green onions, bacon, parsley, pepper and salt. Spoon into prepared tomatoes until 2/3 full.
Place tomatoes on baking sheet, bake on middle rack at 425F oven for 15 minutes or until filling is just set.
Toast and butter rolls. Push down in center of roll to make and indentation. Place cooked tomatoes on the roll and serve.  Serves 4.

Double Tomato Bruschetta
This is an easy and delicious appetizer. Wonderful with fresh tomatoes and basil. The balsamic vinegar gives it a nice little bite.
6 roma tomatoes, chopped. I use whatever tomatoes are ripe in my garden
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 olive oil
2 tbls balsamic vinegar
1/4 cup fresh basil, stems removed
salt and pepper to taste
1 French baguette
2 cups shredded mozerella cheese
Preheat oven on broiler setting.
In a large bowl comine tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper. Let mixture sit for 10 minutes.
Cut the baguette into 3/4 inch slices. On a baking sheet arrange the baguette slices in a single layer. Broil for 1-2 minutes until slightly brown.
Divide the tomato mixture evenly over the baguette slices. Top with mozerella cheese. 
Broil for 5 minutes or until cheese is melted. 
Enjoy with a glass of Pinot Grigio! Cheers!
